Watermelon and Cajun Prawns Salad

Ingredients for 2 persons:
150g Prawn Tails (without shell)
1tsp Cajun Seasoning
1/2tsp Garlic Granules
1tsp Butter
1/2 Small Watermelon
1 Avocado
1/2 Small Iceberg Lettuce
1/4 Fennel Bulb
2 Spring Onions
Some Fresh Basil
1 Lime
20g Cashews
100g Mini Mozzarella Balls
Extra Virgin Olive Oil
Salt & Pepper
Directions:
1.Start with the prawns. Place them in a bowl and add the cajun, garlic granules, and some salt. Mix everything well.
2.Fry in some butter for about 1 minute per side. Remove from the skillet and set aside.
3.Cut the watermelon into bite-size cubes. Place it in a large bowl.
4.Then cut and add the avocado, lettuce, fennel, spring onions, and basil.
5.Squeeze in the juice of one lime. Season to taste.
6.Give it a gentle stir and add it to a serving bowl.
7.On top place the prawns, mozzarella, and cashews.
8.Lightly drizzle with some olive oil and serve.
