Air Fried Potato & Mozzarella Croquettes

Ingredients:
120g Lamb Brand Potato Purée
20g Butter
50g Grated Cheddar Cheese
1/2tsp Thyme
150ml Hot Water. (Adjust amount accordingly)
150g Mini Mozzarella Balls
1 Egg
100g Lamb Brand Panko Breadcrumbs
Salt & Pepper
Directions:
Place the potato flakes in a bowl and add the butter.
Start adding the hot water and mix until you get to a flaky consistency. It needs to be a bit dry as we are adding the egg too.
Add the thyme, egg, cheddar, and season to taste with salt and pepper.
Mix everything together until you get a soft dough.
Form into balls, place a mozzarella ball in the centre and cover them with panko breadcrumbs.
Air-Fry at 180c for about 10 minutes.
