Air Fried Potato & Mozzarella Croquettes

Crispy potato croquettes with a soft mozzarella centre.

Ingredients:

  • 120g Lamb Brand Potato Purée

  • 20g Butter

  • 50g Grated Cheddar Cheese

  • 1/2tsp Thyme

  • 150ml Hot Water. (Adjust amount accordingly)

  • 150g Mini Mozzarella Balls

  • 1 Egg

  • 100g Lamb Brand Panko Breadcrumbs 

  • Salt & Pepper 

Directions:

  1. Place the potato flakes in a bowl and add the butter.

  2. Start adding the hot water and mix until you get to a flaky consistency. It needs to be a bit dry as we are adding the egg too.

  3. Add the thyme, egg, cheddar, and season to taste with salt and pepper.

  4. Mix everything together until you get a soft dough.

  5. Form into balls, place a mozzarella ball in the centre and cover them with panko breadcrumbs.

  6. Air-Fry at 180c for about 10 minutes.
