Maduma Focaccia

Easy crispy focaccia with a soft centre inspired by the Maltese Traditional tile. You can go wild with your creativity and topping choices!

Ingredients for 4 focaccias::

Dough:

  • 600ml Lukewarm Water

  • 1kg Lamb Brand ’00’ Plain Flour

  • 2tsp Dry Yeast

  • 1.5tsp Sugar

  • 1.5tsp Salt

  • 20ml Olitalia E/V Olive Oil

    Toppings:

  • E/V Olive Oil

  • Onions

  • Bell Pepper

  • Fresh Basil

  • Fresh Parsley

  • Cherry Tomatoes

  • Rock Salt

  • Sesame Seeds

Directions:

  • 1. In a food processor or a bowl, combine all the dough ingredients and knead for about 8-10 minutes.

  • 2.Place it in a large bowl, cover with cling film and let it rise for an hour.

  • 3. After about an hour it should double in size, deflate, and gently fold the dough on itself and let it rest for further 45 minutes. Use damp hands to make things easier. For a better result, repeat this step twice.

  • 4. Gently deflate your dough again and cut into 4 pieces. Open them onto your baking trays adding some olive oil at the bottom. You have enough dough for four 21x21cm trays.

  • 5. Prick and open the dough with your fingers and add some more olive oil. Now it’s all about your imagination. Create the design with your favourite toppings and cover them with a kitchen towel. Let them rest for about 20 minutes before baking.

  • You can also add olives, capers, fresh rosemary, sun-dried tomatoes… The list is endless.

  • 6. Lightly brush with some olive oil and bake in a preheated oven at 250°c for 25 minutes, or until they get golden brown.

  • 7. Enjoy!
