Easy Ginger, Nut & Chocolate Cookies

You must try these out! Deliciously chewy ginger cookies with chocolate bits and crunchy nuts. 


Ingredients: (Makes 12-14 small or 7-9 large cookies)

  • 100g Unsalted Butter (softened)

  • 100g Lamb Brand Brown Sugar

  • 1 Fresh Egg

  • 100g Lamb Brand Nuts (chopped)

  • 1tsp Vanilla Extract

  • 150g Lamb Brand Plain Flour

  • 1tsp Lamb Brand Ground Ginger

  • ½tsp Lamb Brand Baking Powder

  • Pinch of salt

  • 100g Lamb Brand Chocolate (chopped)


Method:

  1. Preheat the oven to 180°c and line a baking tray with parchment paper.

  2. Cream butter and sugar together until smooth.

  3. Beat in the egg and vanilla until combined.

  4. Mix the flour, ginger, baking powder, and salt in a separate bowl and gradually fold into the wet mixture.

  5. Add chocolate chunks and nuts, and fold in with a spatula until evenly distributed.

  6. Scoop small balls of the mixture onto the tray, leaving space for spreading.

  7. Bake for 12–15 minutes until lightly golden around the edges.

  8. Cool on a wire rack.
