Coconut Ice Cream Balls

Crispy kataifi and cinnamon shell with a soft coconut ice cream centre. A simple dessert and a different way to serve ice cream. 


Ingredients:

  • 1 tub Benna Coconut White Chocolate Artisan Gelato

  • 150g Kataifi Noodles

  • 1tsp Demerara Sugar

  • 1tsp Ground Cinnamon 

  • 1tbsp Benna Unsalted Butter


Method:

  1. Cut the kataifi into 1 cm lengths.

  2. Melt the butter in a saucepan and toast the kataifi until golden brown.

  3. Transfer it into a bowl and add the sugar and cinnamon.

  4. Mix well and allow it to cool off completely.

  5. Drop about a tablespoon of ice cream into the kataifi mixture and form into balls.

  6. Freeze them immediately to hold the shape. 

  7. Allow them to soften up for about 3 minutes before serving
