Chicken Doughnuts

Ingredients:
Filling:
500g Chicken Breast
1/2tsp Salt
1/2tsp Onion Salt
1/2 tsp White Pepper
1/4tsp Sugar
1/2tsp Soy Sauce
1tbsp Corn Flour
Batter:
100g Plain Flour
100g Corn Flour
1 Large Egg
1/2tsp Baking Powder(optional) Makes them fluffier
1/2tsp Salt
200ml Ice Cold Water
Vegetable Oil for deep frying
Directions:
1.In a food processor, mix together the filling ingredients and work them until you get a thick paste.
2.Line a baking tray with baking paper and using a cookie cutter and your fingers create the doughnuts. Wetting a bit your hands and cookie cutter will make the job easier and less sticky.
3.Freeze for at least 2 hours to hold the shape.
4.In a large bow mix the batter ingredients until you get the consistency of pancake batter. It's important that you use ice-cold water to make them crispier. If you want a fluffier coating, add some baking powder to the mix.
5.Dip the frozen rings in the batter, remove the excess, and fry immediately until golden brown. This should take 8-10 minutes.
6.The temperature of the oil should be medium-high and cook only in small batches (3 at a time) to avoid reducing the temperature too much.
7.Serve with chips and your favourite sauce. Enjoy!
