Ingredients:
3tsp Unflavoured Gelatin Powder
200g Topping Mix Whipped Cream Powder
400ml Bubblegum Flavoured Milkshake
40g Granulated Sugar
40ml Boiling Water
2 Pan Di Spagna (sponge) Cake Bases
2tbsp Icing Sugar
Directions:
1. Dissolve the gelatin in some hot water and allow it to cool down to room temperature.
2. Place the topping mix in a bowl, add the milkshake and start whipping it up. It's important the milkshake is cold, directly from the fridge.
3. As it starts to thicken, gently add the gelatin and keep on whipping until it forms soft peaks.
4. Refrigerate for about 20mins.
5. Let's do a simple syrup using the granulated sugar to an equal amount of boiling water.
6. Stir until it's completely dissolved. Allow it to cool down before using.
7. Drizzle some of the syrup on each part of the sponge.
8. Spread the whipped cream on one of the sponge bases and spread it evenly.
9. Top it with the other sponge, press gently until the cream is touching the edges, and refrigerate for at least 4 hours.
10. Sprinkle some icing sugar on top before serving.
