Almond & Pistachio Mini Log
A Christmas log made from almond biscuit crumbs and pistachios blended with silky pistachio cream.
Ingredients:
150g Almond Cantucci Toscani
50g Carrefour Desiccated Coconut
40g Gusto Etna Crushed Pistachios
120g Gusto Etna Crema al Pistachio
A Dash of Carmencita Vanilla Sugar
Method:
Crush the cantucci until fine crumbs are formed.
Place them in a bowl together with the crushed pistachios and the coconut.
Give it a stir and add the pistachio cream.
Mix well until all are combined.
Form the log using some baking paper, then wrap it in tightly.
Refrigerate for a couple of hours until set.
You can cover with chocolate or drizzle some vanilla sugar on top.
Serve with some delicious Beanies flavoured coffee. A match made in heaven!
