Almond & Pistachio Mini Log

A Christmas log made from almond biscuit crumbs and pistachios blended with silky pistachio cream. 


Ingredients:

  • 150g Almond Cantucci Toscani

  • 50g Carrefour Desiccated Coconut

  • 40g Gusto Etna Crushed Pistachios

  • 120g Gusto Etna Crema al Pistachio

  • A Dash of Carmencita Vanilla Sugar


Method:

  1. Crush the cantucci until fine crumbs are formed. 

  2. Place them in a bowl together with the crushed pistachios and the coconut.

  3. Give it a stir and add the pistachio cream.

  4. Mix well until all are combined.

  5. Form the log using some baking paper, then wrap it in tightly.

  6. Refrigerate for a couple of hours until set.

  7. You can cover with chocolate or drizzle some vanilla sugar on top.

  8. Serve with some delicious Beanies flavoured coffee. A match made in heaven!
