Soppa tar-Ravjul u Zalzett Malti
A rich and comforting tomato soup filled with chunks of Maltese sausage and tender ravioli, simmered with vegetables for a hearty, flavourful Mediterranean dish.
Ingredients: (serves 4)
1 Large Onion (finely sliced)
2 Garlic Cloves (chopped or minced)
2 Carrots (sliced)
1 Courgette (diced)
100g Pumpkin or Squash (diced)
2 Potatoes (diced)
1tsp Olive Oil
2 Maypole Smoked Maltese Sausages (thickly sliced)
2tbsp Tomato Paste (kunserva)
150g Chopped Tomatoes or Polpa
500ml Vegetable Stock
Some Celery Leaves
2 Bayleaves
16 Maypole Ravjul Zalzett Malti
Salt & Pepper (to taste)
Method:
Prepare and chop all the vegetables.
In a large pot or casserole, fry the onion and garlic in olive oil over a medium heat.
When the onion gets soft, add the rest of the vegetables and sliced sausage.
Mix well and continue to cook. For a couple of minutes.
Add the tomato paste, chopped tomatoes, and season with freshly ground pepper.
Add the stock, celery and bayleaves.
Mix well and bring to a boil.
Lower the flame, cover and let it simmer for about 30 minutes.
After 30 minutes, discard the bayleaves.
Finally add the ravioli, mix well, bring to a boil and let them cook for 6 - 7 minutes.
Serve immediately.
