Seed & Nut Cookies

No sugar, no flour, only healthy goodness.


Ingredients for approx. 10 cookies:

  • 80g Walnuts

  • 80g Pecans

  • 80g Unsalted Peanuts

  • 100g Almonds

  • 60g Almond Flakes

  • 100g Pumpkin Seeds

  • 80g Sunflower Seeds

  • 100g Pitted Dates (chopped)

  • 30g Sesame Seeds

  • 20g Chia Seeds

  • 50g Brown Flax Seeds

  • 1/2tsp Cinnamon Powder

  • 1/4tsp Salt

  • 2 Egg Whites

  • 50g Honey


Method:

  1. This recipe couldn’t be simpler, just add all the dry ingredients in a large bowl. Mix them well together.

  2. Add the egg whites and honey, and mix well.

  3. Using a cookie cutter form the cookies onto a baking sheet lined with baking paper.

  4. Bake in a preheated 180°c oven for about 15-20 minutes.

  5. Transfer them onto a cooling rack. Be careful as they might be a little fragile.

  6. Let them cool off completely before serving. 

  7. You can store them in an airtight container for up to a week.
