Healthy Seed & Chicken Sandwich

Low gi sliced bread filled with curried pulled chicken & bell pepper, soft edam cheese and baby spinach. Guilt-free lunch idea.


Ingredients (6 Sandwiches)

  • 12 slices Maypole Loaf GI Sliced Bread

  • 500g Chicken Breast

  • 1/4tsp Curry Powder

  • 2 Bay Leaves 

  • 2tbsp Low Fat Cream Cheese

  • 1tsp Extra Virgin Olive Oil

  • 6 Slices Edam Cheese

  • Baby Spinach

  • Salt & Pepper


Method:

  1. Bring a small pot of water to a boil, add the curry, bay leaves and chicken.

  2. Lower the flame, and cook for about 25 minutes until the chicken is cooked throughout.

  3. While the chicken is still hot, pull it apart using 2 forks or make life easier by using a food mixer.

  4. Place the chicken in a bowl and let it cool down.

  5. Then add the chopped bell pepper, olive oil, and season with salt & pepper.

  6. Spread the cream cheese onto the sliced bread.

  7. Create a layer of baby spinach, followed by the chicken and edam cheese.

  8. Close the sandwich, cut in two and enjoy.
