Quinoa & Pork Pie

Crispy and light on the outside, soft and delicious on the inside. Quick to make, and very filling.

Ingredients:

Directions:

  1. Cook the quinoa in salted boiling water for 14 minutes and discard the extra water. Leave aside. 

  2. In a pot, place 1 tsp of oil and 1 tsp of butter.

  3. Turn on the heat and add the finely chopped onion and carrot.

  4. Cook for 5 minutes until they are soft then add the pork, and cut into bite-size pieces. 

  5. Season with salt & pepper and cook until the pork starts to brown. 

  6. Turn off the heat, fluff up the quinoa, and mix it well with the pork. Allow it to cool down. 

  7. Line a baking tin with baking paper. 

  8. Melt the rest of the butter and mix it with the rest of the olive oil. 

  9. Brush both sides of each filo pastry and cover the whole dish with the pastry overlapping the dish border. 

  10. Fill the dish with the couscous and flip the filo pastry to close off the pie. 

  11. Bake in a preheated oven at 200°c for 20 minutes, or until it’s nicely brown.

  12. Wait for 10 minutes before taking it out of the dish and serve with freshly chopped parsley.
