Pistachio & Berry Pancakes

Delicious berry fluffy pancakes with a nutty pistachio flavour.


Ingredients:

  • 150g Self-Raising Flour

  • 20g Sugar (optional)

  • 1g Salt

  • 200ml Califia Farms Pistachio Flavour Oat Milk

  • 1 Fresh Egg

  • 60g Blueberries

  • 30g Cranberries (fresh, frozen, or dried)

  • 10g Gusto Etna Crushed Pistachios

  • Maple Syrup or Honey

  • Oil or Butter for Frying


Method:

  1. In a mixing bowl, combine the flour, sugar, and salt. 

  2. Add the oat milk and the egg and whisk well until no lumps are visible.

  3. Add the berries and give it a final mix. 

  4. Heat up a non-stick skillet, add some butter or oil over a medium heat.

  5. Add dollops of about 2 tablespoons of the batter and cover for a couple of minutes.

  6. When the top starts forming tiny holes, flip the pancakes and fry for another minute.

  7. Serve with maple syrup, crushed pistachios, and fresh berries.
