Laħam fuq il-Fwar u Brodu tat-Tiġieġ
Traditional Maltese steamed meat, with garlic and parsley, is gently cooked over a simmering chicken broth pot. Serve with fresh Maltese bread, And you'll have one of the best heartwarming, simple comfort meals.
Ingredients:
Meat Dish:
500g Minute Steak (laħam tal-friża)
1-2 Tomatoes (sliced thickly)
2 Green Garlic Stalks (peeled and chopped)
A handful of Fresh Parsley (coarsely chopped)
Extra Virgin Olive Oil
Salt & Pepper
Chicken Soup:
800g Chicken Pieces
1 Medium Size White Onion (peeled, chopped)
2 Carrots (peeled, chopped)
Some Celery
2tbsp Tomato Purée (kunserva)
1 Chicken Stock Cube
2 Potatoes (peeled, cubed)
1 Zucchini (cubed)
1 - 1.2ltrs Water
50g Small Pasta (optional)
Salt & Pepper (to taste)
Maltese bread to serve.
Method:
The method cannot be simpler, for the meat just place the beef in a shallow round dish (same size of the pot).
Add the tomatoes on top, then season with the green garlic, parsley, salt & pepper, and olive oil.
Add about 2cm of water and cover tightly with foil.
For the soup, place all, the ingredients in a large pot, add water to cover all the dry ingredients, give it a stir, and bring to a gentle boil. For a healthier version, you can remove most of the chicken skin, however leaving some will give it a better taste. Remember, fat is flavour! You can discard it once the soup is ready.
Reduce the flame to a minimum and simmer for an hour.
Serve with plenty of Maltese bread. I used Maypole's brown bread, for a healthier alternative.
