Grilled Peach & Halloumi Salad

Deliciously grilled Halloumi cheese & peaches served with pomegranate, walnuts and a Greek yoghurt dressing


Ingredients: (serves 2)

  • 3 Peaches

  • 1pkt Olympus Halloumi Cheese

  • 1tsp Coppini Olive Oil

  • 10g Roasted Walnuts

  • 1/2 Pomegranate 

  • 2tbsp Olympus Greek Yoghurt (10% Fat)

  • 1 small Shallot (finely sliced)

  • Juice of 1/2 Lemon

  • 1tsp Honey

  • 1/4tsp Chili Flakes (optional)

  • Freshly Ground Pepper

  • Fresh Mixed Greens


Method:

  1. Wash the peaches well, pat dry with a kitchen towel and slice them in half, removing the pit. 

  2. Open the Halloumi cheese and drain it from its brine. 

  3. Slice the cheese into 1cm strips.

  4. Grill both the peaches and cheese on a hot grill. A BBQ or hot skillet is also good. If it’s non-stick, it is better.

  5. Cook for about 5 minutes until you get nice charred lines. Let them cool off before using in the salad. 

  6. In the meantime prepare the dressing.

  7. Mix the Greek yoghurt, honey, lemon juice, chilli flakes, pepper, and olive oil in a small bowl. 

  8. Build the salad starting with the greens, then add the cheese and peaches, the shallot, and a healthy serving of this delicious dressing. 

  9. Finish it off with some pomegranate kernels, and chopped walnuts.
