Crispy Eggplant Spirals

A different way how to enjoy this great vegetable.


Ingredients for 2 servings: 

  • 2 Small Long Eggplants

  • 50g Plain Flour

  • 1/2tsp Garlic Powder

  • 1/2tsp Dry Minced Onion

  • 1tsp Dry Basil

  • 1tsp Salt

  • 2 Fresh Eggs

  • 100g Panko Breadcrumbs

  • 15g Relish Premium Rub

  • Lamb Brand Flavoured KusKus


Method:

  1. Peel the eggplants leaving the tip intact.

  2. Starting from just under the tip, create slits in the eggplant of about 2cm. Turn the eggplant 90 degrees and create another set of trips. You should obtain long eggplant sticks, stuck together from the top of the eggplant.

  3. Boil them in salted water for about 2 minutes or until they soften a little, but not too much. Otherwise, they might break off.

  4. Let them cool down on paper towel.

  5. In the meantime, prepare the coating.

  6. In the first bowl combine the flour, garlic powder, minced onion, and salt together.

  7. In a second bowl whisk the eggs.

  8. In a third bowl mix together the panko with the Relish Rub.

  9. Pass the eggplant through the flour, removing the excess, then pass it through the egg and finally give it a good coat of panko mix.

  10. Place them in a spiral form on baking paper and bake in a preheated 250°c for about 20 minutes or until nice and crispy.

  11. While they are cooking, prepare the KusKus flavour of your choice following the instructions on the packet.

  12. Serve the eggplant on a bed of KusKus and enjoy.
