Christmas Bankunċini

Traditional Maltese almond biscuits with a Christmassy chocolate twist.

Ingredients

  • Ingredients :

  • 300g Pure Ground Almonds

  • 300g Caster Sugar

  • 3 Egg Whites

  • 1/2tsp Mixed Spice

  • 1/2tsp Ground Cloves

  • 1/4tsp Almond Essence

  • A Pinch of Salt

  • Rice Paper

  • 50g Roasted Whole Almonds

  • 200g Novi Dark Chocolate

Directions:

  1. In a bowl, mix together the ground almonds, sugar, egg whites, and spices until you get a sticky dough.

  2. Place a piece of rice paper on a baking tin and put small squashed balls of dough on it.

  3. Leave a bit of space between them because they will flatten a little.

  4. Bake in a preheated 180°c oven for 20mins or until lightly golden.

  5. Cool on a rack. 

  6. Melt the chocolate and brush the biscuits with it and finish with a roasted almond on top.

  7. If the almonds are raw, roast them for about 10 minutes or when they get lightly coloured.
