Cheesy Zucchini

Cheese and salami filling enclosed between two zucchini slices with a crispy galletti & Parmeggiano crust.


Ingredients for about 16 portions:


Method:

  1. Slice the zucchini & salami thinly. About 2mm 

  2. Place 4 cheese slices on top of each other, and cut mini discs slightly smaller than the diameter of the zucchini using a small cookie cutter. 

  3. Place a zucchini slice on your worktop, followed by a cheese slice, salami, another slice of cheese and finish of with another zucchini slice.

  4. Crush the galletti and combine them with the grated cheese and season lightly with salt and pepper and pepper in a small bowl.

  5. Beat the eggs in another bowl.

  6. Dip The zucchini in the egg, remove the access and then coat them with the galletti mix.

  7. Place them onto a baking tray lined with baking paper. 

  8. Lightly spray them with cooking oil.

  9. Bake them in a preheated 200°c for about 10-12 minutes or until piping hot.
