Ingredients for 1 - 2 Persons
1 Rack of Pork Ribs
1 Can of Beer
2tsp Olive Oil
2 Garlic Cloves
1tsp Dry Oregano
2tbsp BBQ Dry Rub
2tbsp BBQ Sauce
Salt & Pepper (if required)
Directions:
Remove the thin membrane from the back of the rib rack.
Cut the ribs into individual pieces and place them in a large bowl.
Sprinkle the oregano on top together with the chopped garlic.
Add 1 tablespoon of the dry rub. Have a little taste, if it’s not salty enough add a little salt and pepper to your liking.
Add a can of ice-cold beer of your choice and mix everything well. Make sure you cover all the ribs in the marinade.
Cover with cling film and refrigerate for a minimum of 2 hours. For the best results leave them overnight.
Place some kitchen paper towels on your kitchen top and place the marinated ribs on top. Do not throw away the leftover marinade.
Pat them dry and try to remove as much moisture as possible.
Place them in a bowl and add the olive oil and the rest of the dry rub and mix well. Use your hands if needed.
Put them directly in your air fryer and air fry for 20 minutes at 170°c
I’m using the Cosori DualBlaze Air Fryer which has heating from both the top and bottom. This means that there is no need to shake them halfway through. If you are using a single heating air fryer, give them a mix after 10 minutes.
In the meantime let’s prepare the sauce.
Pass the remaining marinade through a sieve and boil it until it reduces to a quarter.
Pass it again through a sieve and add the bbq sauce, and mix well.
After 20 minutes remove the ribs from the air fryer and coat them well with the sauce.
Turn the air fryer to 200°c and cook them for another 5-7 minutes.
Serve them with some more bbq sauce and enjoy.
