Balbuljata

Balbuljata is a classic Maltese comfort dish. Soft scrambled eggs cooked with tomatoes and onions, usually eaten with crusty Maltese bread. It’s simple, quick, and really good for breakfast, lunch, or a light dinner.
Ingredients: (serves 3-4)
4 eggs
2–3 ripe tomatoes (chopped)
1 onion (finely sliced)
1tbsp tomato paste (kunserva)
1 tbsp olive oil
1-2 tbsp Grated Cheese
Salt and black pepper
Fresh parsley (chopped)
Maypole Low-Carb bread to serve
Method:
Heat the olive oil in a pan.
Fry the onion gently until soft and slightly golden.
Add the chopped tomatoes and cook until soft and reduced — around 5–10 minutes.
Beat the eggs with cheese, salt and pepper.
Pour the eggs into the tomato mixture.
Stir slowly over low heat until the eggs are just set but still soft and creamy.
Finish with freshly chopped parsley.
Serve immediately with warm, crusty bread.
