Sugar-Free Strawberry Tiramisu

Guilt-free delicious tiramisu using simple healthy ingredients.


Ingredients:

Cream Filling:

  • 250g Mascarpone Cheese (room temperature)

  • 400g Neogal 2% Fat Greek Yog

  • 1tbsp Honey

  • 1tsp Vanilla Extract

    Strawberry Syrup:

  • 400g Fresh Strawberries

  • 1tbsp Lemon Juice

  • 1tbsp Honey

Others:

  • 200g Sugar-Free Lady Fingers Biscuits (or similar)

  • 20g Crushed Pistachios or Cocoa Powder

  • Extra Strawberries for Garnish


Method:

  1. Blend the strawberries, lemon juice, and honey until smooth.

  2. In a separate bowl, beat mascarpone, Greek yogurt, honey and vanilla until smooth and creamy.

  3. To assemble, lightly soak ladyfingers in the strawberry syrup, don’t let them get too soggy.

  4. Arrange a layer of soaked ladyfingers in a dish (20x20 cm or similar)

  5. Spread half of the cream mixture over them.

  6. Repeat with another layer of soaked ladyfingers, and the remaining cream.

  7. Sprinkle the crushed pistachios on top, following by some sliced strawberries.

  8. Cover and refrigerate at least 4 hours, ideally overnight.
