Gozo Cheese Kievs


Ingredients:

Filling

  • 200g Salted Butter

  • 3-4 Crushed Garlic Cloves

  • 2tbsp Chopped Parsley

  • 50g (half) Gozo Peppered Cheeselet

Shell

  • 5 Boneless Chicken Thighs

  • Salt (to taste)

  • 1cup All-Purpose Flour

  • 3 Eggs

  • 2cups panko Breadcrumbs

  • Vegetable Oil for Deep Frying

Directions:

  • 1. For the filling combine butter, garlic, parsley, and grated cheeselet.

  • 2. Wrap in cling film forming 5 small balls.

  • 3. Freeze for about an hour until solid.

  • 4. Flatten out chicken thighs with the use of a kitchen mallet.

  • 5. Season well with some salt.

  • 6. Place the butter mixture in the center and fold into balls. Cover the filling well.

  • 7. Freeze until solid. (2-3hours)

  • 8. Dip in flour then egg mixture. Repeat twice. This will create a tight seal.

  • 9. Dip in egg and panko. Repeat as well and press well to coat the kievs completely.

  • 10. Deep fry at 180°c, a minute each side. This will create the crust and help the kievs keep their shape.

  • 11. Bake preheated at 180°c for 20-25 minutes until golden brown.

  • 12. Let them rest for 5 minutes and serve.

  • 13. Enjoy!
