4 Cheese Froġa tat-Tarja

Ingredients:

  • 400g Capellini Pasta (tarja)

  • 150g Mozzarella

  • 50g Grated Pecorino Cheese

  • 200g Fresh Goat's Cheese

  • 50g Feta Cheese

  • 3 Eggs

  • 2tbsp Fresh Parsley

  • Salt & Pepper

  • 1tsp Olive Oil

Directions:

  • 1. In a small bowl combine the eggs, pecorino, parsley, salt & pepper. Mix well.

  • 2. Cook the pasta as instructed and let it cool.

  • 3. Add the egg mixture to the pasta and combine well.

  • 4. In a separate bowl combine the mozzarella, goat's cheese and feta together.

  • 5. Heat well an oven proof deep frying pan or a cast iron one.

  • 6. Put half of the pasta mixture in the pan and top it with the cheese mixture.

  • 7. Add the remaining pasta mixture, cover and fry gently for about 8 minutes.

  • 8. Uncover and place in a hot 220°c oven and cook until golden. This should take around 15 minutes.

  • 9. Flip onto a serving tray and cut into portions.

  • 10. Enjoy!
