Ingredients:

Dough:

  • 500g '00' Flour

  • 2tsp Dry Yeast

  • 1.5tsp Sugar

  • 1tsp Salt

  • 50ml Olive Oil

  • 300ml Lukewarm Water

  • 2tbsp Semolina (to open the dough)

Toppings

  • 1tbsp truffle Purée

  • 100g Goat's Cheese

  • 100g Mozzarella

  • Salt (to taste)

  • 10g Chopped Walnuts

  • Olive Oil

  • Crushed Black Pepper

  • Rucola

  • Semolina

Directions:

1. Dash some semolina on a clean surface and work your dough into a circle.

2. Make 8 even cuts about 1.5inches deep. Transfer dough onto a baking tray.

3. Spread truffle purée.

4. Let the cheeses drain well of their natural water. Mix cheeses with some salt and place a teaspoon between each cut.

5. Fold edges as indicated closing tightly the ends.

6. Spread the remaining cheese and sprinkle with walnuts.

7. Bake in a preheated 250°c oven for about 15mins. Or until the dough is fully browned.

8. Drizzle with olive oil, crushed fresh black pepper and top it with fresh rucola.

9. Enjoy!
