Lemon & Ricotta Pasta
Ingredients for 2 persons:
250g Ħanini Irkotta
50g Grated Ħanini Pekorin cheese (or pecorino)
1 Lemon Zest (grated)
400g Mafalde Pasta or Similar
1tbsp Olitalia Extra Virgin Olive Oil
Salt & Pepper
Fresh Parsley or Basil
Directions:
Bring a large pot of water to a boil, add about a teaspoon of salt then toss the pasta. Cooking time as instructed on the packet.
In the meantime let’s prepare the sauce.
Place the irkotta in a large bowl followed by the grated cheese, lemon zest and the olive oil. Season with salt and pepper.
Mix well to combine.
Add a ladle or two of pasta water (this depends on how creamy you want your sauce)
Mix well until it’s creamy.
When the pasta is ready, discard the water and add the pasta to your bowl.
Mix well and serve immediately with freshly crushed black pepper and finely chopped parsley.
