Gozitan Khachapuri
Ingredients:
Dough:
1/3cup Warm Water
2/3cup Warm Milk
2tsp Dry Yeast
1/2tsp Sugar
300g 00 Flour
1/2tsp Salt
3tsp Olive Oil
Cheese Mix:
200g Gozitan Goat Cheeselets
150g Feta Cheese
200g Mozzarella
Topping:
2tsp Unsalted Butter
2 Eggs
Directions:
1. In a large bowl or food processor put warm water, milk, dry yeast, and sugar.
2. Mix and let it stand until it froths up. (around 10 minutes)
3. Add flour, salt, and 2tsp olive oil and mix until you get a dough.
4. Transfer to a clean bowl covered in a teaspoon of oil and cover.
5. Let it rise for at least 2 hours in a warm place.
6. In the meantime crumble all the cheeses and mix. Do not add salt because the feta cheese is salty!
7. With the help of some flour deflate the dough, cut in half and open in a rectangular shape.
8. Put it on baking paper and make two lines of cheese near the top and bottom edges. This will create a cheesy crust.
9. Roll the edges and form it into a boat-like shape. Make sure to twist the edges well. You have enough ingredients for 2 Khachapuris.
10. Fill with cheese, transfer on a baking tray and bake in a pre-heated 250°c oven on the lower shelf.
11. Bake for 15 minutes.
12. Create a small well in the center and crack an egg in each boat. Do not crack the yolk!
13. Bake for an additional 3 minutes.
14. Add some butter, cut one side and mix well to incorporate the egg, butter, and cheeses.
15. The heat will cook the egg well.
16. Enjoy the cheesy/eggy goodness!
