Fresh Ġbejna Burger
Ingredients for 2 persons:
2 Fresh Gozitan Cheeselets (Ġbejniet Friski)
20g Grated Parmesan Cheese or Pecorino Romano
1tbsp Fresh Finely Chopped Parsley
400g Fresh Ground Beef
1tbsp Relish Premium Smokehouse Rub
100g Oyster Mushrooms
1tbsp Olive Oil
1tbsp BBQ Sauce
1tbsp Mayonnaise
Curly Lettuce
Focaccia Bread
Salt & Pepper to Taste
Directions:
In a small bowl combine the Gozo cheese, Parmesan, Parsley, and season to taste.
In another bowl season well the ground beef with half a tablespoon of Relish Smokehouse Rub and mix well until combined.
Open the beef on a piece of cling film into a rectangular shape.
Place the cheese mixture on top then gently fold over the beef with the help of the cling film.
Carefully roll the beef creating the roll with the cheese enclosed inside.
Flatten it into a long patty and refrigerate for about an hour to hold the shape.
In a small bowl place the oyster mushrooms and mix them well with the olive oil and 1/4tbsp of Premium Rub.
Prepare your BBQ or a hot griddle on your kitchen hob.
Gentle remove the patty from the plastic film and place it on a piece of baking paper to make it easier to place on the griddle without breaking it. Be very gentle to keep the cheese inside as much as possible.
Combine the remaining rub with some olive oil and brush the patty while it’s cooking with this mixture.
Cook for about 3 minutes per side depending on how well done you like your patty.
Cook the oyster mushrooms for about 5 minutes flipping them halfway.
Finally cut the focaccia in half and grill it too to crisp it up.
To combine, simply spread the mayonnaise on the focaccia bread, add the lettuce, the grilled patty, and the oyster mushrooms. Finish it off with some of your favourite BBQ sauce or ketchup.
Serve with crisps or French fries.
