Egg And Tuna Sandwich

Ingredients:
2 Large Cans Blue Angel Tuna (in oil or brine)
1 Small Shallot
2 Hard Boiled Eggs
Mayonnaise
Mustard
Freshly Ground Pepper
Chives or Chopped Parley (optional)
Lettuce
Sandwich Bread
Directions:
1.Drain well the tuna cans and place them in a large bowl.
2.Chop the hard-boiled eggs and add them to the tuna.
3.Add the mayonnaise, English mustard, freshly ground black pepper, and optionally add some fresh chives or parsley. Do not add salt as the tuna is already a bit salty. Just check it for taste and add some if desired.
4.Place a piece of lettuce and two tablespoons of the tuna mixture in each sandwich and enjoy!
