Curry-Mayo Potato Salad

Ingredients:

  • 4 Medium-Size Potatoes

  • 1 Small Shallot

  • 2 Hard Boiled Eggs

  • 2tbsp Hellmann's Real Mayonnaise

  • 1/4tsp Curry Powder

  • 1tsp Fried Onion

  • 1tsp Spring Onion

  • Salt & Pepper

Directions:

1. Peel, wash, and cut the potatoes into bite-size cubes.

2. Fill a small pot with water and bring it to a boil.

3. Add a teaspoon of salt and add the potatoes.

4. Boil them for about 5 minutes until cooked and firm. Do not overcook them as they will break up.

5. Remove from the heat and cool off.

6. Add the curry to the mayonnaise.

7. Finely chop the shallot and cut the eggs into small cubes.

8. Add them to the potatoes, season with salt & pepper, and mix everything well.

9. Chill in the fridge for at least 2 hours.

10. Serve with fried onion and/or spring onions.
