Coke Zero Chicken Wings
Ingredients for 2 persons:
500g - 600g Chicken Wings
1tsp Vegetable Oil
3 Spring Onions (peeled & coarsely chopped)
1 Dry Red Chili Pepper (optional)
3 Star Anise
2tbsps Apple Cider Vinegar
400ml Coca-Cola Zero
2tbsp Soy Sauce
Zest of 1/2 Orange
1/2tsp Cornflour
1/2tsp Salt
Toasted Sesame Seeds
Method:
Add the vegetable oil to your wok or saucepan and fry the chicken for about 6 minutes. You just need to crisp it up a little and give it some colour. No worries if it’s not cooked thoroughly.
Remove the chicken and set it aside.
In the same wok, add the spring onions, chilli pepper and star anise and fry them for about a minute stirring constantly.
Add the vinegar and deglaze the wok, then add the Coca-Cola.
Add the orange zest and soy sauce.
Mix the cornflour with some water or coke, add it, and bring it to a gentle boil.
Add back the chicken, and stir it.
Let it cook over a medium-low flame stirring once halfway through.
Let the sauce thicken and evaporate. This will take around 15 - 20 minutes.
Serve with rice or noodles, and drizzled with fresh spring onions and toasted sesame seeds..
